This was tonight’s dinner, and great as something to throw together really quick. You can also add zucchini and corn to this, but I kept it basic. What I love about this recipe is that it’s completely vegan, and the cocoa makes it smooth enough that you don’t need cheese or sour cream, which means it’s very low fat.
